It's Friday! Wooohooo! This week's recipes were interesting because there wasn't a recipe to follow. I went to the farmer's market on Saturday. The rest? Well...that is recorded below.
It all started with a little chicken breast.
Monday: The best chicken ever! Find the best extra virgin olive oil you can and add an all purpose seasoning to the olive oil. Give the chicken a little "bath" in your mixture. I left mine in there for 6 hours. When your chicken is done soaking throw it on the grill and viola! A masterpiece.
Tuesday: Grilled chicken tomato feta salad. Remember that chicken from yesterday? Go get the leftovers (if there are any) cut it up in small cubes. Find some beautiful tomatoes. May I suggest the farmers market?
Cut those beauties into cubes as well. Add some onions and minced garlic. Throw a little extra virgin olive oil in the mix and let the flavors marry for about 30 minutes in the fridge.
This dish was light yet filling and so easy. The perfect summer salad.
